Greensboro, NC -- A lot of people know Easy Peasy for its decadent desserts, but the menu does not end there.
Traci Rankins makes a Veggie Quiche that is quickly developing a reputation of its own.
Rankins uses 4 eggs, spinach, tomatoes, onions, mushrooms and a pre-baked crust to makes her quiche. She tops it off with cheese and bakes it for 30 minutes at 350 degrees.

4 large eggs
1/2 cups heavy cream
Salt and pepper
10 grape tomatoes
1 cup sliced mushrooms
1 cup fresh baby spinach
1/2 cup green onion chopped
1 1/2 cups shredded cheese (mixed 4 cheese)
3 to 4 slices of muenster cheese
1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate
Preheat the oven to 375 degrees F.
Combine the eggs, cream, salt, and pepper in mixer. Beat for 5 minutes until fluffy. Layer the spinach, cheese, tomatoes, mushrooms, and onions in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.
