Curry Chicken & Rice Recipe
1 tablespoon olive oil
¼ cup medium diced red onion
¼ cup medium diced green bell pepper
¼ cup medium diced carrots
2 tablespoons spice delight all purpose essence
2 teaspoons curry powder
1 quart chicken stock (better than bouillon) brand
1 cup basmati rice
1 cup cooked rotisserie chicken
Method
In a large stock pot over medium high heat add the first six ingredients listed above.
Cook five to seven minutes.
Add stock, rice and chicken then simmer for 30 minutes until rice is tender.
