-Take the meat off the bone and get it in the fridge no more than two hours after you're done
-If it's still in the fridge after two days, stick it in the freezer!
-Immediately refrigerate mayonnaise or egg-based food
Here's a simple recipe from Chef Barry for a sauce you can make to pour over some of those leftovers!
Rosemary Pomegranate Sauce
Ingredients:
1 cup Revah pomegranate wine
2 teaspoons minced fresh rosemary
1-2 tablespoons butter
Salt and pepper to taste
Method:
In a medium skillet over medium high heat, add rosemary and wine.
Bring to a boil and let wine reduce to syrup consistency.
Remove from heat and add butter.
Season with salt and pepper, serve over cooked turkey.
