Beef Roast With Garlic, Mustard and Rosemary Recipe

Serves 8 to 10 servings

Roast Ingredients
1 (4 to 5 pound) beef roast or standing rib beef roast
1/2 cup stone ground mustard
1/3 cup Spice Delight All-Purpose Essence
1/3 cup olive oil
1/4 cup minced garlic in the jar
¼ cup dried rosemary

Method for Roast
Place beef roast in roasting pan.
In a small bowl, combine remaining ingredients into a paste. Pierce deep slits into the roast about ½ -inch between slits. Open slits using your fingers or the end of a spoon; fill with mustard paste. Use a spoon to spread remaining paste evenly over entire roast.
Cover roast with plastic wrap and let marinate in refrigerator at least 24 hours. Remove roast from refrigerator 45 minutes prior to cooking.
Preheat oven to 350 degrees 20 minutes before cooking. Remove plastic wrap from roast. Cook roast about 15 minutes per pound.
Remove roast from oven when internal temperature reaches 120 degrees.
Cover with foil and let rest 10 minutes before slicing.
