Chef Barry's Super Bowl Orange Teriyaki Wings & Bacon And Pepperoni Pizza Recipes

Orange Teriyaki Drummettes
Makes 4 servings

Ingredients
2 pounds chicken wing drummettes
1 tablespoon Spice Delight All-purpose Essence

Method
Preheat oven to 350 degrees. 15 minutes prior to cooking.
In a large bowl, combine all ingredients listed above; mix well.
Refrigerate to marinate at least 30 minutes prior to cooking.
Place in even layer on a rimmed cookie sheet.
Bake 35 to 40 minutes or until done.

Orange Teriyaki Glaze

Makes about 3 cups

Ingredients
2 cups teriyaki sauce
½ cup thawed frozen orange juice concentrate
¾ cup brown sugar
2 tablespoons cornstarch
2 tablespoons water
Sesame seeds to garnish

Method
In a large skillet over medium high heat, add the first 3 ingredients listed above.
Bring to a boil. Reduce heat to a simmer. Dissolve cornstarch in the water. Pour slowly into the teriyaki glaze while whisking. Turn off heat when sauce reaches desired thickness.
Add drummettes to sauce and let stand for 5 minutes.
Transfer drummettes to a serving bowl or dish. Garnish with sesame seeds.

Peppered Bacon & Pepperoni Pizza
Makes 4 servings

Ingredients
1 (11 oz.) Garlic & Herb Focaccia loaf
½ to ¾ cup marinara sauce
1 teaspoon Spice Delight All-Purpose Essence
1/2 teaspoon dried basil
Pepperoni slices to taste
¼ cup cooked, crumbled pepper bacon
1/4 to 1/2 cup low-fat Mozzarella cheese

Method
Preheat oven to 350 degrees. Place Focaccia loaf on a cookie sheet.
Spread sauce evenly over the loaf.
Sprinkle sauce with Spice Delight All-Purpose Essence and basil.
Top with Mozzarella cheese, bacon and pepperoni.
Bake for 10 to 12 minutes or until the cheese is melted.
