Here are the recipes for three quick and easy kid recipes to start their day.
Eggs in a Nest
Cook a piece of toast and cut out the center in a fun shape. Place it in a frying pan.
Crack an egg in the middle and cook on medium heat until egg is cooked.
Slather on some cocconut spread on the toast and eat away!!
Overnight Oatmeal
2 cups rolled oats (not instant or quick cooking)
2 cups lowfat milk or unsweetened soymilk or almondmilk
1 teaspoon lemon zest
1/2 teaspoon vanilla extract
1/4 cup chopped pecans, walnuts or almonds
2 peaches or apricots, pitted and sliced
2 tablespoons agave nectar (optional)
Combine oats, milk, zest and vanilla in a bowl, cover and refrigerate overnight. The next morning, scoop oatmeal into bowls and top with pecans, peaches and a drizzle of agave nectar.
-Fresh Fruit Salad with Creamy Yogurt Dressing
6 ounces plain or vanilla yogurt
1/4 cup raspberry frozen juice concentrate, thawed
1 teaspoon poppy seeds
1 cup chopped apples
1 cup sliced bananas
1/2 cup blueberries
1/2 cup chopped kiwi
1/2 cup sliced peaches
1/2 cup strawberries
5 teaspoons shredded coconut
In a large bowl, mix yogurt and raspberry juice concentrate until thoroughly combined. Stir in poppy seeds. Add apples, bananas, blueberries, kiwi, peaches, and strawberries and toss gently to coat. Garnish with coconut and serve.
*If you are preparing the salad to serve later, wait until just before serving to cut and stir in apples and bananas since they will brown when exposed to air.
