She's a realtor by profession, but it's her work in the kitchen that caught the attention of the Good Morning Show's Tracey McCain. Lolita Malave joined the News 2 Kitchen Friday to share her cinnamon coffee cake. Watch the attached video to see how she whips it up!
- 1 box of yellow or butter flavor Duncan Hines cake mix
- 4 eggs
- 1 cup of water
- 1 cup of vegetable oil
- 1 (3.4 ounce box each) of instant butterscotch and vanilla pudding mix
- 1 cup of well chopped pecans
- 1 cup of packed brown sugar
- 1 tablespoon of cinnamon
Preheat the oven to 350 degrees. Spray a bundt pan really well with spray oil (or you may use a 9 x 13 pan).
In a large bowl mix together all of the cake ingredients. Blend with a hand mixer for a least 1 minute or until well blended.
In another bowl mix together the nuts, cinnamon and brown sugar.
Pour half of the batter into the Bundt pan and sprinkle 3/4 of the nut mixture on top of the batter. Don not stir. Carefully pour in the remainder of the batter and sprinkle the rest of the nut mixture on top.
Place in the oven and bake for 20 minutes, then reduce the heat to 325 degrees and continue baking for another 35 to 40 minutes.
Remove the cake from the oven. The cake is done if a wooden skewer inserted comes out clean and the cake is pulling away from the edge of the pan.
Allow the cake to cool in the pan on a rack for about 20 minutes and then turn onto a cake platter. Sprinkle with powdered sugar if desired.
