Dietician and local food blogger Rebecca Subbiah stopped by the News 2 Kitchen on the Good Morning Show Wednesday to show her special spin on a panini sandwich.

Brie, Pear and Branston Pickle Panini Recipe:

Ingredients 

  • 3 thin slices of brie cheese 
  • 4 thin slices of pear (any desired, not too ripe so it has a crunch, Asian pear would work well)
  • 2 slices of whole grain bread 
  • 1 teaspoon of branston pickle 

Instructions

1. Slice cheese and pear 

2. Add pieces to one slice of bread spread branston pickle on the other 

3. Top with other slice of bread 

4. Add to panini press and cook for about 3 minutes until brown and cheese melts 

5. Enjoy 

Aged Cheddar, Marmalade and Arugula Panini Recipe:

Ingredients 

  • 3 thin slices of aged cheddar 
  • 4 arugula leaves 
  • 2 slices of whole grain bread 
  • 1 teaspoon of marmalade 

Instructions

1. Slice cheese 

2. Add pieces to one slice of bread with the arugula and spread over marmalade on the other slice of bread 

3. Top with other slice of bread 

4. Add to panini press and cook for about 3 minutes until brown and cheese melts 

5. Enjoy
