Chef Kristina Fuller from "Crafted" in Greensboro shows us how to make gourmet tacos, candied bacon, and "Dirty South Nachos."
Bok choy slaw
2 cups napa cabbage(shredded)
1/2 large carrot(grated)
2 tbsp scallions(sliced)
2 cloves garlic(minced)
1 tbsp ginger(minced)
1/2 cup rice wine vinegar
2 tbsp sesame oil
1/4 brown sugar
1/4 cup soy sauce
1 tbsp sambal
4 pieces baby bok choy(core removed and rough chop)
Mix all ingredients together in a bowl and let sit for one hour at room temperature
Hoisin
4 cups black bean paste
1 cup soy sauce
2 c rice wine vinegar
1/4 c sesame oil
1/2 cup chili base
1/2 cup maple
1 cup brow sugar
Chipotle aioli
1/4 cup soy milk
2 cup oil
1 t garlic powder
1/2 t salt
Juice of half lemon
5 ground chipotle peppers
3 T brown sugar
