Pat's Pecan Pie Muffins Recipe
Ingredients:
2 cups pecans, chopped small
2 cups packed brown sugar
1 cup flour
4 whole eggs
1 cup melted butter*
1teaspoon pure vanilla extract
Preparation:
Beat eggs until frothy
Stir in butter and vanilla
Add dry ingredients with the pecans and mix well
Put liners into muffin tray (approximate yield 12)
Scoop batter into muffin liners
Bake at 350° F for 20 minutes
Note:
Muffins do not rise. They will remain the same size that you fill
Holiday Bread Pudding Recipe
Ingredients:
2 tablespoons butter*
10 cups cubed Challah bread
1 cup pecans, chopped medium or small
5 eggs, beaten
4 cups Half-and-Half*
1 cup whole milk*
1 cup packed dark-brown sugar
3 tablespoons bourbon (or extract)
2 teaspoons pure vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/4 teaspoon grated nutmeg
Preparation:
Butter a 13 by 9-inch baking dish
Add cubed bread
Sprinkle bread evenly with the pecans
In a large bowl, whisk together remaining ingredients
Pour the liquid mixture over the bread in the baking dish
Coat the bread pieces well
Let the mixture sit 45-60 minutes for bread to absorb liquid
Preheat the oven to 350° F while bread pudding is absorbing liquid
Place baking dish in the center of oven
Bake for 50 minutes, or until set and pulling a bit from the sides
Let stand out of oven for 10 minutes before serving
Some Variations:
Many breads can be substituted for Challah. Each will add unique characteristics: sweet to hearty
Add: ½ - 1 cup Craisins, raisins or golden raisins.
Craisins & Golden Raisins are festive for Holidays!
Substitute rum (or extract) for bourbon
Eliminate bourbon
Eliminate pecans
Top with scoop of Whipped Cream
