Robin Davis, the owner of Maxie B's Bakery in Greensboro stops by The Good Morning Show to show us a few of her favorite holiday treats. She even gave us her recipe for seafoam candy.
Seafoam Candy
Approximately 48 candies
Robin's Dad's Favorite! (this was his mother's recipe!)
1 3/4 c. brown sugar
3/4 c. white sugar
1/2 c. hot water
1/4 c. light corn syrup
1/4 tsp. salt
2 egg whites
1 tsp. vanilla
1 tsp. maple extract
48 Pecan halves for garnish
Combine sugars, water, corn syrup, and salt in a
pan. Cook covered until mixture boils rapidly.
Remove lid, place candy thermometer and cook to
275 degrees. Remove from heat.
Beat egg whites stiff. Pour hot syrup in thin stream
over egg whites, beating with mixer on high speed.
Add flavorings.
Continue beating until soft peaks form and candy
starts to lose its gloss. Pipe IMMEDIATELY into petit four liners, top with a pecan half.
