Greensboro, NC -- 700 children in need will have some extra food to eat this weekend, and volunteers are thanking a twist of fate from a truck spill.

According to North Carolina's Department of Transportation, an accident on I-40 left potatoes all over the place.

Instead of tossing them, a non profit called 'Out of Garden Project' stepped in to save more than 1,000 pounds of potatoes.

They added the potatoes to the packaged meals they give away each Friday for kids to eat on the weekend.

"Somebody's going to be able to put these potatoes in their stomach this weekend and that is a miraculous thing," said Out of The Garden Project Executive Director Don Milholin.

The non profit provides food for children in 40 Guilford County Schools and one school in Forsyth County.

Children will be able to take the potatoes home after they leave school on Friday.
